Unicum – Zwack

One of Hungary’s most important drinks, these round, green bottles stamped with a golden cross on a red label are ubiquitous in Hungary. Unicum is a national institution in Hungary, and has a long history that in some ways mirrors the history of modern Hungary itself. The story of Unicum is the story of the Zwack family, which has owned the company since the end of the 18th century (with the exception of the 40-year period when it was nationalized by the Communists). Dr. Zwack, a physician for the Imperial Court of the Austro-Hungarian Dual Monarchy, is credited with creating the drink to alleviate the royal family’s digestion problems. Unicum is a rich, dark bitter which is made from more than 40 herbs and spices. The exact composition is a carefully guarded family secret (which was stored in a safe deposit box in New York during the Communist era, and is now safeguarded by the Archbishop of Esztergom). Part of the secret mixture is macerated for 30 days in water, while the other part is distilled. Then, in a process that has remained almost unchanged for more than 200 years, both are blended and aged in oak casks for six months. The story of Unicom and the long history of this family business mirrors Hungary’s own history. Unicum was created by Dr. Zwack, a physician for the Imperial Court of the Austro-Hungarian Dual Monarchy, to help with the royal family’s digestion problems. “Das ist ein Unikum!” (This is unique!), Emperor Joseph II exclaimed when he tasted the drink. The name stuck, and József Zwack founded the company in 1840, introducing the drink to the general public. It was one of the first commercial distilleries to use all natural ingredients, and it became the sole liquor purveyor to the Imperial Court.

During the 1944 siege of Budapest the Unicum factory was destroyed. It was rebuilt and modernized only to be confiscated and nationalized by the Communist government in 1948. It remained under state control for the next 40 years. During that time, most of the Zwack family left Hungary for Italy and the United States. János Zwack took the family’s secret recipe with him, and left a fake recipe behind for the Communists. Until Péter Zwack (János’ son) bought back the company in 1989, the Hungarian factory continued to produce an inauthentic version of Unicum. There was a period during the transition when both the fake and the original versions were sold for about a year.
