Egri Bikavér Superior Selection – Böjt Borászat
A special and historic wine deserves a distinctive bottle. In 2019, Eger—the semi-volcanic region in northeastern Hungary—further committed itself to their flagship Egri Bikavér blend with the introduction of a new wine bottle exclusively for this wine.The elegant bottle shape was inspired by a bottle that was used in the region in the 1930s, and then vanished. The “1552 Eger” inscription on the neck is a nod to the siege of Eger, during which Eger’s citizens successfully defended the town from the attacking Ottoman army. This new bottle is just one aspect of the young generation’s Eger’s march forward in reversing the image of Bikavér as a low quality supermarket plonk, to a world class blend made according to exacting standards. Not all wineries in the region have adopted the new bottle. The family-owned Böjt Winery has been run by the brother and sister team of Gergő and Boglárka Böjt since 2016, after being founded by their parents in 1993. They have 12 hectares of vineyards, and the winery is located in Ostoros, four kilometers from the city of Eger. As required according to the Bikavér regulations, Bikavér is built on a backbone of Kékfrankos (Blaufrankisch). This wine is 50 percent Kékfrankos, with Cabernet Sauvignon (18 percent), Pinot Noir (seven percent), Blauburger (15 percent), and Zweigelt (10 percent). The latter two varieties are both crossings involving Kékfrankos. Grapes come from Eger’s Kutyahegy vineyard. Each component was aged separately in oak barrels, for a total of 18 months of oak aging, and a further six months of bottle aging before release. This is a solid wine—with 14.5 percent alcohol, dominant dry tannins (in an entirely good way), and a great balance from the terroir. It starts with the lovely aromas: Szechuan peppercorn and star anise spices, smoky aromas of tobacco and cigar, very jammy cherry and blackberry, and a hint of Cognac. Additionally, the palate shows plenty of Eger minerality. The low yields in the vineyard, combined with the barrel aging, lend this wine a beautiful complexity. We recommend opening it when you have time to sit with it for a while. You’ll be rewarded as it opens up in your glass.

One of Hungary’s red wine bastions, Eger, the home of Bikavér (aka Bull’s Blood), also boasts a diverse geological make-up which includes rhyolite tuff. It is also Hungary’s northernmost red-wine-producing region. Historic vineyards planted on these volcanic rocks make some of the biggest, fieriest wines in the region. As in Tokaj, this tuff lends itself perfectly to the carving of cellars. It hosts 99 percent of Eger’s cellars, including networks of passages dozens of miles long and the famous cellars under the city’s fortified castle.
Although historically a white wine land like its volcanic counterparts, red varieties displaced the whites and finally after the blight of phylloxera, Eger’s flagship red blend, Egri Bikavér, attained a worldwide reputation at the start of the 20th century. Winemakers here take this traditional blend seriously.
It has improved tremendously and has little in common with those past Bikavér’s which were exported to the West during the Communist-era of mass-produced wine. Varietals that find their way into Bikavér are Kékfrankos (Blaufrankish), Pinot Noir, Portugieser, Merlot, and Kadarka, and all of these are also bottled as single varietal wines.
At the start of the 21st century, Bikavér gained a white partner, Egri Csillag (‘Star of Eger’). Approximately 50 percent of the region’s vineyards are planted with white grapes and as no one variety dominates, so it was logical to make Egri Csillag a blend, in keeping with the region’s traditions. It is a very variable blend based on Carpathian-basin varieties, such as Olaszrizling, Hárslevelű, Leányka, Királyleányka, Zengő, Zenit and some Hungarian crossings. A minimum of four of these varieties must be included and make up at least 50 percent of the blend and each must represent a minimum of 5 percent. The blend may also include up to 30 percent of fragrant Muscat varieties, such as Cserszegi Füszeres, Zefír, Irsai Oliver, Tramini and Muscat Ottonel. With their blend of history, volcanic minerality, and native varietals, there’s a lot to explore in Eger’s cellars.
László and Éva Böjt received a small vineyard plot as compensation after the fall of Communism, using it to found this winery in 1993. Located in the village of Ostoros, four kilometers from the city of Eger in northeastern Hungary, this is a relatively cool climate, and partially volcanic, wine region.
Since 2016 Gergő and Boglárka, their son and daughter, have taken the lead and have been running the winery, producing outstanding wines which are great representations of the Eger terroir. The much travelled and internationally experienced Gergő makes the wine, and Boglárka sells it.
