Péter Váli’s childhood dream was to own a place where he could create new dishes every day from what was available and fresh in the farmers market, and serve them next to his own wines. His dream came true in 2000 when he opened his winery / restaurant / guesthouse on the northern shore of Lake Balaton, in the small town of Badacsonyörs. He farms his vineyards organically, and works with a low intervention philosophy in the cellar. Tabula Rasa is a blend of Hungary’s two Rieslings: Olaszrizling (a.ka. Welschriesling) and Rajnai Riesling (a.k.a German / Rhine Riesling). Half of it was fermented and aged in 500-liter barrels, while the other half was produced in steel tanks. Only two barrels (about 1,200 bottles) of this wine were made. With 12 percent alcohol, it has complex aromas of dried herbs, dried flowers, mangoes, and ripe pineapple. It will develop in your glass, and for the patient ones, in the cellar.
